Do you know when in a restaurant you just tasted something really good and the first thing you think is “If I only could make it at home..”? At La Casa di Francesca that’s possible!
In 2014 the “Trasimeno Cooking School” was inaugurated. It is an authentic laboratory to teach the techniques for the preparation of the dishes daily served at the restaurant. Affectionate customers, friends, tourists, kitchenlovers, everybody can deal with the preparation of planned menus, homemade pasta, traditional recipes or more refined dishes, always with the oversight of Francesca.
The classes (minimum 4 people) take place in a wide and comfortable dedicated room where you will find all the equipment and receive an apron, a recipe and a certificate free of charge. According to the planned menu, the chef will teach you to cook traditional recipes that we will taste at the end of the lesson.
We will create a tailor-made package according to your needs, with discounts for more than 4 people.
Inside our school there is also a little shop dedicated to truffle and the most important products of the umbrian-tuscan territory. (oil, pasta, saffron, sauces).
Thanks to this class you will be absorbedin the fantastic world of truffle. It will be an exclusive experience for gourmet lovers and an emotion between nature and cuisine.
Preciuos, valued, rare and…aphrodisiac! The truffle is one of the most loved and appreciated products of the italian cuisine and Tuscany and Umbria are its natural birth place. It’s a mushroom that grows under the ground and develops its typical scent after the maturation.
During the truffle harvest period, our cooking class starts with a beautiful walk in the woods with the truffle collectior and his dog and he will show you the secrets of his research. With our chefs, you will prepare delicious dishes with truffle (to agree when you book the cooking class or leave to chef’s imagination) and they will be tasted after the class.
At the end of the class you could buy some products made from truffle or fresh truffles (when available). A way to astonish your next guests by setting up the table with tasty truffle dishes cooked by using the techniques and recipes learned.

Chef Francesca is ready to tell you and uncover your secrets to prepare one of the most Italian products that envy us and accompany every meal: bread. You will smear, smell, bake (and taste!) fragrant sandwiches, pizzas and buns for all tastes. A class to learn the best bakery techniques that will take place in our modern room for cooking classes and contemplates the use of our wood oven.
Hot and steamy pizzas, rosemary buns and crunchy sandwiches will then be accompanied by salami and cheese from our areas or transformed into tasty bruschettas. During the class you could realize the dough of the recipes proposed, under the supervision of Francesca. After the class then, everyone at the table to the taste all the dishes cooked.
After the class you will realize pizzas of all types and learn the tricks of all the phases of the pizza, from the dough to the choice of the floor to be used, from the dough rolling to the baking. Try your ability and prepare your favourite pizza..tasting it with your classmates will be un unforgettable experience!

Do you think as Francesca that cookingis a way to discover your personality and free your imagination? So, the pastry class is what it is for you! Learn to prepare with precision the desserts that attract you, giving the right space to your creative touch!
You will discover the processes of making traditional desserts of the area between Tuscany and Umbria,as well as the bases of pastry such as the making of the shortcrust pastry and flavoured creams. You will learn to realize the famous “cantuccini” biscuits with almonds to be tasted with the Vin Santo, the grandma cake with shortcrust pastry and lemon cream, the well known Tiramisu, pies with homemade jams or tasy and delicious mousses and Bavarians.
During the lunch or dinner following the class, you will eat a first course made by Francesca and continue with the tastings of the prepared desserts accompanied by excellent dessert wines.

Discover the secrets of Umbrian and Tuscan tradition, a poor and genuine kitchen that always uses seasonal ingredients with classic recipes based on meat, vegetables, pasta, legumes and cheeses told and revisited by Francesca to let you appreciate the inebriating scent of this land.
Some of the vegetables used during the class will be picked up all together in our little garden that we cultivate next to our cooking class room.
You will knead and roll the dough to prepare “tagliatelle” (egg noodles)or try to prepare “pici” (big tuscan spaghetti made of water and floor), as well as the tricks for a perfect meat cooking or the realization of a tasty and scented ragout. Each lesson includes the preparation of an appetizer, a first course, a second course and a dessert and it will followed by a lunch or dinner where you will taste your prepared meals combined with excellent local wines.
